Ingredients
1/2
cup
quinoa
washed/rinsed. This will make about 2 c cooked
1
c
water
1
clove
garlic, mashed and minced
1/2
Tbspn
red onion, chopped
1/2
Tbspn
olive oil
1/2
Tbspn
chopped parsely
Salt/Pepper to taste
I like Himalayan Sea Salt
Instructions
Rinse quinoa
Warm an 8 qt pan (you need a cover).
Add olive oil and heat slightly
Sautee onion and garlic until clear. Careful not to burn.
Add in parsley and quinoa.
Toast quinoa – you will hear it sizzle and pop. It will become aromatic.
Add water and salt/pepper the water to your taste. Bring to boil and cover. Then simmer on low for 12 minutes.
After 12 minutes, turn off stovetop and let sit covered for 10 minutes.
Fluff with fork before serving.
