One trick to cooking quinoa is to pre-wash it. You should soak it for a few minutes and then rinse it in a colander. Doing this makes it taste less nutty. I boil the quinoa in a home made veggie broth (meat free). You can always cook it in chicken stock.

Ingredients
- 1/2 cup quinoa washed/rinsed. This will make about 2 c cooked
- 1 c water
- 1 clove garlic, mashed and minced
- 1/2 Tbspn red onion, chopped
- 1/2 Tbspn olive oil
- 1/2 Tbspn chopped parsely
- Salt/Pepper to taste I like Himalayan Sea Salt

Instructions
- Rinse quinoa
- Warm an 8 qt pan (you need a cover).
- Add olive oil and heat slightly
- Sautee onion and garlic until clear. Careful not to burn.
- Add in parsley and quinoa.
- Toast quinoa - you will hear it sizzle and pop. It will become aromatic.
- Add water and salt/pepper the water to your taste. Bring to boil and cover. Then simmer on low for 12 minutes.
- After 12 minutes, turn off stovetop and let sit covered for 10 minutes.
- Fluff with fork before serving.
